Friday night I needed a quick, full proof dinner for my boy and me after a long, tedious week at work. So I decided to do the quick stir fry that mum whips up that is always so tasty and was probably the first dish I learnt how to cook since I love it so much.
Unfortunately the noodles I picked up crumbled when i washed them, but that didn't matter too much, it just made eating with chopsticks a little more challenging than usual.
1. Fry noodles in a bit of oil and with some soya sauce (sesame oil optional). Set aside once lightly fried and cooked.
2. Cook chicken or beef in a bit of oil and oyster sauce until cooked. Add chopped vegetables; I used carrots and broccoli. Add about 1/2 cup of water and cook, stirring occasionally.
3. Add some diluted cornflour to thicken up the sauce. Crack an egg and stir around. Put over the top of the noodles and serve.
